Why eat more RAW? Enzymes, Alkalization, and Energy!

Raw living food are our life energy force. Our bodies are like a car that needs to be fuelled. If we starve our car it will eventually run out and if we put low quality fuel into our car it will not run efficiently. Our bodies work exactly the same way, if we fuel our body with processed and cooked food all the time, it will start to show signs of health problems. Our bodies can’t run on processed, unhealthy cooked food forever without showing strain.

Anyone embracing a diet high in raw foods, invariably experience improvements in their general physical and mental status, including more energy, better health, weight loss, detoxification, and a sturdier immune system that better resists and recovers from just about any kind of dis-ease.

Raw Food versus Cooked Food?

Simple…..cooking destroys the nutrients. When you eat a high raw living food diet you are feeding your body and your cells; live foods filled with vitamins, minerals, enzymes and other life giving substances that cooking destroys. There are many factors why raw foods improve health but enzymes, nutrients and acid alkaline balance are of most importance.


When food is cooked at over 112 degrees (this temperature can be felt as warm to the touch) we destroy all of its enzymes and we need enzymes for every function in our body. To walk, to talk, to breathe, for digestion and circulation, and also in the prevention of inflammation and other deteriorating influences responsible for aging; life itself depends on enzymes, no plant, animal or human could exist without them. Enzymes provide the life force for all living things as they are the spark of life found in every living sell. As we age, our body’s natural source of enzymes becomes depleted and we need to replenish this source through the foods we eat. If we do not do this and we continue to eat cooked/processed foods, then we eventually begin to use up our body’s enzyme reserves. Also cooking makes it harder for our bodies to break up and digest the foods that we eat. This food then begins to get stored in our bodies as toxins; which can lead to all kinds of diseases and illness.

Dr. Humbart Santillo, M.D., states in his book Intuitive Eating that:

“A human being is not maintained by food intake alone, but rather by what is digested. Every food must be broken down by enzymes to simpler building blocks. Enzymes may be divided into 2 groups, exogenous (found in raw food) and endogenous (produced within our bodies.) The more one gets of the exogenous enzymes, the less will have to be borrowed from other metabolic processes and supplied by the pancreas. The enzymes contained in raw food actually aid in the digestion of that same food when it is chewed. One can live many years on a cooked food diet, but eventually this will cause cellular enzyme exhaustion which lays the foundation for a weak immune system and ultimately disease.”

When we are born we are given a limited amount of enzyme energy that has to last us a lifetime. Think of this as your enzyme bank account. If we do not make regular deposits to this account from eating exogenous enzymes that are found in raw foods and we continue to eat cooked foods that use up our enzyme supply, we become more susceptible to aging, disease and premature death. The enzymes that are destroyed in cooking food are detrimental in so many ways. Not only does it affect our immune system but also our brain function and our energy levels.

Dr. Edward Howell, states in his book Enzyme Nutrition that:

“Humans eating an enzyme less diet use up a tremendous amount of their enzyme potential in lavish secretions of the pancreas and other digestive organs. The result is a shortened lifespan (65 years or less as compared with 100 or more), illness, and lower resistance to stress of all types, psychological and environmental. By eating foods with their enzymes intact and by supplementing cooked foods with enzyme capsules we can stop abnormal and pathological aging processes.”

Alkalization – Acid Alkaline Balance

An over acid body is found in most people with acute or chronic diseases. Some common symptoms of an overly acid body are arthritis, depression, headaches, lethargy, gastritis, dulled mentality, canker sores, fatigue, muscle stiffness, stomach aches, chest pain, constipation, irritability, sinus problems, acid reflex, restless sleep and so much more. But an overly acid body can lead to many more serious health problems. For example, cancer cells are able to live better than normal cells in an acid environment.

Dr. Ted Morter states:

“When your body is too acid for too long, it plays the game of life with a line up of backup systems. These backups are either substitute minerals, or ammonia. When your body is too acid – when your normal pH is too low – the systems and organs of your body work overtime just to stay even. But systems and organs aren’t designed to function flat – out in red – alert mode all the time. They need rest just as you do. If the red – alert goes on for months or even years, systems and organs become exhausted. An exhausted body can’t compete with disease. Eventually, disease wins the game.”

Our bodies pH balance should be slightly alkaline, which our New Zealand diet is not, but by eliminating acid producing foods and eating a diet that is high in raw fruits and vegetables will change the pH balance.

What is pH?


A pH stands for “Potential of Hydrogen”, which measures how acidic or alkaline a substance is. If the solution has an equal amount of acidic and alkaline molecules, the pH is considered neutral. The pH scale is logarithmic and runs from 0.0 to 14.0 with 7.0 being neutral. Readings less than 7.0 indicate acidic solutions, while higher readings indicate alkaline solutions.

The pH levels controls the speed of the body’s biochemical reactions. The body tries to maintain an alkalizing pH of 7.365.  All foods are classified as alkalizing or acidifying based on the effect the food has on urine pH after consumption. If a food increases the acidity of urine after consumption, it is classified as an acidic food. Conversely, if a food increases the alkalinity of urine after consumption, it is classified as an alkalizing food. By consuming a diet rich in alkalizing foods helps the body maintain a 7.365 pH.

A diet that is too high in acid forming foods and low in alkalizing foods is the major factor of our body’s becoming too acidic. A typical New Zealand diet; meat, fish, poultry, eggs, dairy, white sugars, flour products, pasta, breads, most cooked grains, most beans, most nuts, candy, soda, coffee, tobacco, alcohol, chemical additives, preservatives, drugs and synthetic vitamins are all acid forming and will disrupt the pH balance in the body.

Foods on the pH Scale

The pH balance of the human bloodstream is one of the most important biochemical balances in the human body. The body will actually deposit and withdraw minerals from within itself in order to maintain a proper pH. A proper pH is also required to achieve good health, improved immunity and stay at a healthy weight. The more unbalanced pH levels are, the more the individual is likely to develop health problems or struggle with his weight. Additionally, feeling tired, lethargic or generally unwell are symptoms of an unbalanced pH level within the body.

Also when the body comes under excessive stress this leads to an increased acidity of the blood. Stress causes the endocrine system to release excess adrenaline and other hormones which can lead to acidosis. Similarly, a diet high in acidic foods such as meat/processed foods and low in alkalizing foods such as fruits and vegetables can also disrupt the pH balance in the body.

The building blocks that our bodies need to function are enzymes, vitamins, minerals, phytonutrients, protein, essential fats and fibre. These are all provided by our food and are involved in growth, repair and maintenance of the body. Let’s take a quick look at each of these and what they do for you.

Enzymes – are catalysts that enable chemical reactions, convert the food we eat into chemical structures that can pass though the membranes of the cells lining the digestive tract and into the blood stream. Their job doesn’t end there. Enzymes are the living proteins that direct the life force into our biochemical and metabolic processes. They help transform and store energy, make active hormones, dissolve fibre and prevent clotting. They have anti-inflammatory effects. Enzymes help balance and restore the immune system, and heal many diseases. Enzymes even help repair our DNA and our RNA.

When we cook food, we destroy many of the enzymes that help us naturally digest it!

Vitaminswithout vitamins our cells would not function properly and thus our organs would suffer and eventually we would no longer be able to survive. Vitamins help regulate metabolism, help convert fat and carbohydrates into energy, and assist in forming bone and tissue.

Minerals seventeen of the thirty elements known to be essential to life are metals. Mineral deficiencies cause disease in humans. Minerals also have a synergistic relationship with vitamins. They help each other, help us! When foods are cooked, many of the minerals are destroyed, or altered, rendering them useless and also unable to assist our friends the vitamins.

Phytonutrients are what give fruits and vegetables their colour. Phytos protect the body and fight disease. They also fight cancer and help your heart. Phytonutrient are at leading edge of research on nutrition. They provide medicine for cell health. And once again, Phytonutrients in freshly harvested plant foods can be destroyed or removed by cooking.

It just makes sense…..if cooking destroys the vital and essential nutrients that we need to stay healthy, eating our food raw does the opposite. It provides us with what we need for our health and well being.
